Help for a picky eater?

This is maybe a silly question, but about how long does broccoli last in the fridge? I always have extra when I make it (I just put frozen into the microwave), but I'm never sure how long things are good for.

I've actually never fried an egg, aha! But I suppose scrambling them and eating them with toast would also work pretty well, wouldn't it?

Fruit is hard to snack on just because we really, truly don't have a lot of fresh fruit just... regularly around? About the only fruit we consistently buy is bananas, so I think that's an area where I need to be a little more assertive when it's time to make a grocery list. Nuts are pretty inconsistent for me; sometimes I get a lot of anxiety eating them, other times they're fine for a while. Hardboiled eggs are unfortunately a pretty mushy texture. :( I've tried making them a couple times in the past, but I just can't manage to eat them.

Smoothies are alright though! I'm currently digging around for recipes with fruits and leafy greens and the like, since that way I don't have to deal with the texture.

Thank you very much for the 1-pot suggestions though! I was just looking at pilaf recipes the other day, and I've never heard of biryani before, but they both look really delicious, and I've been itching to try foods with a lot more spices. Both of those -- and stir fry -- might be a little more than I'm currently capable of, just in terms of cooking ability, but I think I could get someone to help me out!
