Help! haven't played since launch, what should I do to be up to date for Shadowkeep?

Don't worry about leveling up in particular. Everything is going to get bumped up to a 750 starting point for Shadowkeep, so dumping resources into that specifically will go to waste.

With the armor rework coming, you shouldn't worry about trying to get well rolled armor either. It would help at the start of Shadowkeep, but it's not necessarily a priority unless you're fixing to be in the top percentage of players doing raid stuff the moment it's released.

Resources and weapons are where you want to put most of your focus depending on what you have. There's currently unobtrusive AFK farms at the forges. So long as you lower your power level, you won't get matched with anyone that isn't also farming so you won't be getting in anyone's way. You can stockpile those resources, and use them to get other resources from Spider depending on what his trade options are for the day, or trade them into planetary vendors so you can recycle gear for legendary shards.

Whatever weapons you want to focus on kinda comes down to you, and what parts of endgame you feel like doing. With incoming balance changes, we can't say for sure what is going to be top tier.

Your current checklist should just be to do whatever interests you most then. Does 1k voices look like a cool weapon to you? Try to get it. Anarchy? Go for it. Last Word? Thorn? Have at 'em.
