[Help] I'm wary of shelter dogs, but I want to rescue

Good rescues should let you have short meet ups with your potential dog a few times before commiting to taking it. They should be just as eager to see if you are the right fit as you are. Talk to the rescue beforehand and see if they would let you have a few meet ups with the dog first (maybe take it for walks a few times too), and then take it home for a week or so as a testing period.

I don't think breeders are a good idea, there are thousands of amazing dogs out there already that would love a home. Both of my previous dogs were rescues, and so were 4 of my cats. You just need to take your time until you find the right one <3
