Are you planning on using Google services at all? I would caution against using the P40 unless you insist on missing out.

Some lower-cost alternatives you could consider include the Pixel 4a 5g (€500, good photos but meh video) or even the iPhone 11 (€600, fewer lens but a pretty darn good camera) The phones you listed are about the best it gets for camera quality though.

Still, really any current phone will be half-decent with the camera, and it'd be disingenuous to strongly recommend one over the other unless you really nitpick photo details. Besides OIS for non-shaky photos, maybe look at other phone details like cost or battery life first.

DXOmark provides lots of really thorough camera comparisons (ignore the number and look at the comments and photo samples instead) if you really wanna pick the absolute best camera possible.
