Help with my V60 (sour & long brew time)

V60 can be very hard to make consistently with an entry level grinder. In my experience, brewing light roast coffees (esp washed) will not yield good results unless you've invested in a good grinder (e.g. OE, Knock, Comandante). Washed and light roast coffees have precise flavors that requires precise equipment and dial-in. So if you're grinder isn't great, it makes sense to brew darker roasts (medium to dark) and/or natural processed coffees, since both the processing and roasting reduces the precision of the flavors.

I would not discount the acidity present in light/washed coffees until you've had a perfectly dialed-in cup using a good grinder, since the peaks of these coffees can be pretty amazing. That said, darker roasts and naturals are also satisfying in their own way. Good luck!
