Hey guys, what are some cheap yet impressive meals I could make for my gf when she gets home tomorrow?

What are her favorite foods? I think pasta with shrimp, a simple salad, some bread hot from the oven and a glass of wine would be really nice!

What you'd need: (Grocery list) 1/2 lb large shrimp, peeled and deveined (tails on or off) olive oil 1/2 bunch parsley, finely chopped 2 garlic cloves, minced 2 tbsp unsalted butter 2 tbsp capers, drained and chopped 1/2 lb linguine, cooked to al dente 1 bag italian salad mix or 1 small head each radicchio and romaine juice of 1 lemon salt and pepper wine love!

Put the pasta water on to boil while you get the rest of the meal ready. Start with the salad: In a medium bowl, toss the radicchio and romaine together (about 2 cups romaine and 1/2 cup radicchio, torn into bite size pieces). Set aside.

In a skillet large enough to hold the pasta, heat about a tablespoon of olive oil over medium-high heat. Add the butter and when it foams, add the garlic and saute just until you can smell it; a few seconds. Toss in the capers.

Add the shrimp in one layer and sprinkle with salt and pepper. Cook the shrimp for about 2 minutes on each side, or until they have some color. Remove the shrimp to a plate and turn off the heat to the skillet.

Test the pasta, when it's cooked but still has a little bite in the center, drain it and reserve a few tablespoons of pasta water. Turn the skillet back on and toss the pasta with the melted butter mixture, adding pasta water to coat each strand. Toss the shrimp back in and continue cooking for about 3 minutes to warm everything up.

Finish with the chopped parsley, and plate the pasta in warm bowls. Dress the salad and serve: 1 tbsp olive oil, toss greens to coat. Add the juice of a lemon and salt and pepper to taste. And easy, cheap and healthy meal to impress.
