Hits you like a train

Your right to question OP's sentiment. I was particularly surprised by their comment about avoiding cognitive decline. Personally, due to my family history, I have a high chance of developing alzheimer's, regardless of my actions, which would inevitably cause cognitive decline for me.

Still, I think it's important to consider that even though taking care of one's self sometimes doesn't matter in the sense that we will often still fall ill, it's impossible to know what diseases we prevent or delay through healthy living. Health is basically a crapshoot, as you rightly illustrate, but healthy living can maximize one's current quality of life while providing one with best chance for a high quality of life moving forward.
