[Homemade] Eggs Benny

1) Very fucking fresh eggs.

2) Crack them into a strainer and strain off the loose whites into a bowl. Discard them. Carefully tip the strained egg into the same bowl to reduce washing up.

3) Heat water and vinegar to about 80 degrees (176f). Not boiling!

4) Gently(!) swirl the water and pour the egg quickly into the outside of the pot. That is, not at the centre of a vortex but in the lazy river which circles it.

Cook for 3-4 minutes and remove with a slotted spoon.

I've tried every possible method including sous vide which adds an additional layer of bullshit and found the above the most simple with a bit of practice. Remember: Fucking fresh eggs. There's a reason hotel buffets get this right with a daily delivery of them.
