They could just as well have taken the Winterfell/northern food stores with them, and been met in the Riverlands by supply convoys from the Vale. Again, I can't imagine the Wall would have fallen in just a day, so they would have had more than enough time to move south without necessarily having to rush and drop everything to march.

Plus, once Dany took King's Landing they would have had an uninterrupted supply chain from the Reach, too. So even in the event of a prolonged defense at the Neck, the refugees and troops would have been well fed and supplied.

For that matter, the many "defensive buildings" in the North are irrelevant when the dead will swarm anything with walls.
