How do you guys cope with having a non-vegan partner?

Same here! Took about 3+ years until one day they made the leap and decided to cut it all out completely. I feel like it was a bit rocky when I first became vegan considering it's a pretty big shift in lifestyle. Things that were simple like grocery shopping, going out to eat, making dinner (for 2) became a stressful situation. Took some time for us both to adapt, and eventually we started cooking completely plant based at home to "simplify" things, and they would usually deviate when we'd eat out or at someone's home. They had been 100% on board with the ideals and knew that ultimately going vegan aligned with their views for most of that time, and then one day they just committed to it. And tbh, our relationship didn't change much (it's been evolving this whole time). Although, it is nice to be able to join forces now in all situations. AND they've started to enjoy certain tofu dishes, when before they wouldn't touch it. Lol

Sorry for the long post, just wanted to share that it is possible!
