How much does it cost to live in Texas?

Lubbock is probably one of the cheapest city in the state. It has a majority population of Hispanics, tons of restaurants, and if your the type, a ton of Christian churches to choose to worship at. Depending on how isolated you want to feel. See, the one thing a lot of out of state people don't realize is how much driving you will be doing if you want to travel within the state. If your girlfriend is going to live or want to drive to Mexico, if you or both of you live in the northern part of the state (DFW, Lubbock, Amarillo, etc.) you are going to get tired of driving. Not to mention border checks and having a passport. Since you live in Massachusetts, driving out of state will take minutes, driving out of state in Texas literally can take a day. Anyways, if she wants to be closer to her family, but wants to live in the US, check the border towns. Brownsville, Zapata, Roma, Larado, El Paso, heck even Corpus Christi (plus you'd be on the beach). Anyways, I don't know you and your gf's situation, but you will enjoy living in Texas.
