How do you test your brakes effectiveness? (Secondary question about bleeding dual systems)

> how do you more experienced riders test your brakes so you have faith in them, and know your general stopping power without locking and tucking the front?

Go to a parking lot, hit 30-40MPH and progressively increase your braking effort until you find the maximum.

> I am too cautious to try and slam the anchors on for fear of flipping over the front.

Just remember you don't want to slam on the brakes, you want to start braking then increase to maximum braking. The difference is important because the traction of the front tire increases the harder you brake, but if you just slam on the lever it will lock up.

> How do I change the fluid in a dual disk system? (...) Or just crack the nipple on the calliper and bleed it empty and then fill it and push the air out?

Bleed it normally. DO NOT DRAIN THE SYTEM. That will only make it harder to bleed. Especially if you end up with air in an ABS line, since that requires special tools to bleed.

Traditional wisdom says to start with the caliper furthest from the master cylinder, then do the other.
