Huge price jump in under 12 hours?

Hey so even funnier story for you - 14 years in legacy airline corporate. Nobody is tracking individual web sessions and offering differential pricing between users. That is highly discriminatory. The airlines may display itineraries preferences by how somehow historically travels by time of day or gateway, but they’re not going to offer that traveler one fare while offering another traveler a different fare for the same itinerary. If you’re buying on the airline’s website, no inventory is going to be reserved just by searching, either. It only gets taken out once it’s purchased. An agency can do what you’re referring to, but simple web-based shopping will not.
