If you eat meat, you're contributing to the next outbreak, and you're in the same league as wet-market consumers.

Cool. I agree it’s good for the environment. But guess what? I’m an omnivore and my species always has been and I will continue to consume meat every so often, because it helps my body and because killing animals is not inherently immoral, it’s the suffering that is. I limit my intake for environmental reasons and don’t eat dairy. But I live so far north we cannot grow our own crops and hunting is sparse. The meat industry is often all I have.

Not everybody has the options. Not everybody is willing to sacrifice an occasional important part of their diet, and sacrificing it will not fix the poor conditions the meat industry subjects animals to. Protesting does that. Veganism is too quiet and not supported enough to stop animal abuse.
