If you HAD to become champion to one daedric prince, who would it be, and why?

They all suck. Anyone who thinks they might be happy or safe in daedric afterlife is sorely wrong. Saying that I'd probably choose Azura or HM.

Azura is generally the best of the bunch imo and so long as you are genuinely zealous and don't go against her the afterlife is apparently good, I would bet it sucks compared to the divines or other traditional afterlives though.

And HM because he's probably the most flat transactory daedra in that he probably won't renege a deal so long as you genuinely pull through and aren't interesting enough so out of all daedra he's perhaps the best chance you have to one day free your soul, probably won't happen though.
