I'm having trouble convincing myself to play Persona 4 now that I've spoiled it all for myself

I think you should still play it, I mean I haven't played all of p5 myself yet but I do know the story and it is still an extremely fun game. I spoiled the whole who is the traitor thing in p5 (if you haven't played and dont want spoilers dont click the tag please and thanks) to the point where I had even watched the cutscene of akechi dying on youtube but then I went and played the game and still found myself crying for a good little while after the character mentioned in spoiler tags died. You get attached to the characters through your own playthrough as it is unique to you so even if you know what's going to happen you can choose how you spend your time which makes the game still impactful.
