Folders. I think it's faster to have 1 screen with my most commonly used apps in a few folders than multiple pages. For rarely used apps, it's faster to open the app drawer, which is alphabetized so it's easy to scan through - or I'll use the search bar in the drawer to search for the app.

For example, opening Reddit is fun from my home screen is 2 taps, which takes me almost exactly as long as simply tapping an icon outside of a folder since I already know RIF's position in the folder itself. Note that on Android, folders can hold just as many icons as a page on the homescreen, so this is more viable there than on iOS.

If I were using multiple pages instead, I would have enough icons they'd be spread out over 2-3 pages. To get to an icon not immediately visible on the first page, I have to swipe, possibly multiple times to get to the page I want, then tap the icon. Not to mention that rarely used apps take up space on the home screen too, so I have to organize these manually, maybe dropping them into a folder or something. Don't forget that they won't be alphabetized automatically so you have to guess the order.
