This is by far the most popular soda bread in Ireland. It is sold in Supervalu and Centra known as Sean's bread.

I work as a Baker in one of these and this is the closest I can get to it.

Preheat oven to 180c

You will need 2 bowls.

Bowl 1: 330g plain flour 60g wheat germ. 15g baking powder, sifted. 20g sugar Pinch salt.

Bowl 2 : 450g buttermilk.

Add dry to wet. Mix very little just until combined.

Add to greased 2lb loaf tin. Flatten with wet hand and flour the top lightly.

In work we usually cut the centre but I didn't here.

Bake at 180c for 50 minutes.

Allow to cool before cutting. It should sound hollow after baking if tapped.
