I've heard more than once that stuff is cheap in KC

Seafood in the KC area is kind of a special case. Other than fresh (live) clams, mussels and oysters, which are even seasonably available at Costco, so-called fresh saltwater seafood here is generally not worth buying. First of all, much of it, despite the fancy price, is defrosted frozen. Second of all, people here don't eat fish much, so the "fresh" stuff in supermarkets ... even the never-been-frozen stuff ... generally sits around longer than it should. Upscale supermarkets here display it on crushed ice ... not the best way to keep it fresh when it is in open displays that allow air circulation. And they charge very high prices for that. I eat a lot of fish (as opposed to shellfish), but I buy it frozen from Costco. Yes, fresh generally is better than frozen, but if frozen fish has been properly handled, all the way from boat to retail, it is vastly superior to some so-called fresh product such as a whole gulf redfish that has been sitting on cracked ice at your local supermarket for god knows how long. You want your fresh fish to come from a fish retailer who does a lot of business, which means fast product turnover. The once source of truly fresh ocean fish I know of is a Galveston-based traveling truck operation that sells in Lawrence periodically, fabianseafood.com . These guys are reputable ... google them. A lot of their product is flown in, not trucked. All of it is SUPER fresh. They sell only gulf fish and shellfish. I'm on their email list so I know when they're coming. Anything I buy from them gets cooked and eaten that day because otherwise, I'm just wasting my money. I have no connection with them other than as a customer.
