Is it just me or is Skyward Sword HD MUCH more enjoyable this time around?

I'm gonna be honest with you, man, and tell you that you're likely going to be disappointed with BOTW2. I don't expect any real dungeons in it, and if there are, you might have something like... 4? Every Zelda game past OoT has had only around that many real dungeons. MM, WW, SS (too many double letter names, lol) were all like that with the only exception being TP, but that game Nintendo doesn't like to ever talk about, for some reason.

I really liked BOTW, but I'm also like you and was let down in that the only "dungeons" that existed were Beast puzzles that were... not difficult and only time-consuming. It was like playing a Portal game, except with MUCH simpler puzzles and no portal gun. I also don't consider BOTW to be "the best Zelda game ever," because... it's not a Zelda game. It could've been a standalone IP and if made by Nintendo, could've still sold well. It's disappointing to see games that have Nintendo franchises slapped on them just to sell more.
