I like the people but not the scripture?

If you're about to marry an Orthodox guy and you're not Orthodox, I hope you know what you're getting into. Unless he's really liberal about it and doesn't care what you do, or unless you don't mind doing lots of Orthodox things, you may be in for some unexpected things.

He may or may not demand that you go around with your hair covered and following Tzniut rules. He will demand you keep fully kosher at home. He will demand you follow all Niddah laws. You will have to put up with extreme dietary measures for Pesach. You will have to put up with him believing a lot of things you never heard of which may or may not include young earth creationism and Noah's flood, that it will be a good thing to build a 3rd temple and start doing animal sacrifices and killing homosexuals and sabbath violators and heretics, that stepping on a toenail on the ground might cause you to miscarry.... Just know what you're getting into. There are some people on r/exjew who married up in terms of religiosity and did not like what happened.
