Big batch is my favorite. I use spaghetti squash as a staple for a ton of recipes. Some of my favorite combos:
I would guess that two, maybe three spaghetti squash would yield enough for the both of you to eat throughout the week. You can add baked chicken slices, lean turkey, tofu, or whatever protein you prefer for a more hearty and nutritious dish.
Other random batches:
turkey cabbage: fried, ground lean turkey + stewed and seasoned cabbage OR use lightly boiled cabbage to make wraps + rotel OR drained rotel if you're using wraps
soup: the options for large batch low-cal soup are just insane. can of tomatoes + chicken/beef/veg broth + veggies of your choice (celery, carrots, cabbage, and beans are great staples) + lean ground protein + seasonings
chicken and veg: buy a bag of boneless, skinless chicken breasts (get some Ms. Dash seasonings to change up the flavor) + green beans pan fried in a little bit of olive oil with minced garlic + sweet potato (I prefer to microwave them because it makes eating the skin more feasible than oven roasting, but you do you)
speaking of sweet potato: this is gonna sound super gross, and maybe i'm the only one who likes it, but one of my favorite things is mashing up sweet potato + black beans + pack of splenda + hot sauce + two sprays of spray butter + black pepper + garlic powder. it looks super gross and sounds super gross but it is heavenly and sooo filling.
