I think most of Jinx's anger was focussed on herself rather than Vi and that her whole "bomb thing" is an externalisation of her desire to self destruct.

In ep6 when she met Vi, it was clear that Jinx had pushed Vi right to the back of her mind and that any remaining feelings were just fragments and veneer. One tiny upset and within seconds, Vi became just another liar, once again.
In essence, Vi - to Jinx - was little more than someone who had lied to her, much like Sevika and Silco did.
Heck, even at the dinner table, it required the potential death of Vi and Silco's actual death to even realise that they were the only people in the entire world who loved her.

Beyond those few seconds of emotional lucidity, only flickers of true remorse remain; the Ekko fight being one of them and the Hextech explosion in her lair.

Jinx was already dead inside long before Episode 4 started.
