Lost it all and gained it all back. Advice?

I was trying to retrain my body to do three meals instead because I've been through a lot of trials to see what I can work with as my regular diet but it seems my body rejects that and still gains weight even a year later as if its still in starve mode despite me regularly eating the same. There really is no way I can do 1 meal with all the activity I do every day. I also know most people who lose weight are bound to gain in back esp if they switch up their diet (which i find 3 healthy meals much better for the body than 1 very under reccomended daily calorie meal). Do you think sustaining kind of the same portions each meal would help regulate the body?
