I love cooking so much but there are so many foods I can't stomach.. I need help figuring out how to expand my pallet!

If meat is not your thing why not just cook vegetarian? I don't know why you equate 'expanding your palate' with 'eating more meat'. Grab a copy of Ottolenghi's Plenty or some other vegetarian cookbooks and figure out what your taste preferences are. I'm decidedly not vegetarian but I think it's perfectly possible to cook delicious food from all over the world without using meat at all.
