I love spicy chicken tortilla soup

Instant Pot Spicy tortilla soup

*spicy warning - the way I make this 95% or more of people consider too spicy *

I like using dark meat. Boneless thighs are a favorite. You can use any chicken cuts.

I cut an onion up and dice it.

I use kitchen shears to cut the meat up into bite size chunks. Toss in instant pot. I use about a lb of meat - but not exact.

Turn on sauté function. Let one side brown and flip.

Monitor pot. Turn off sauté to prevent burning if you are a klutz like me.

Dice onion and Toss it in the instant pot.

3 or 4 garlic cloves diced. Can use a couple teaspoons of garlic powder instead.

Toss in around 4 cans worth of chicken broth or homemade (better). I’m referring to 14-16 oz cans. I have a 6qt pot.

I use a lot of cumin. Probably 2-3 tablespoons maybe even more.

A tablespoon smoked paprika.

A teaspoon of Mexican oregano.

A tablespoon of ancho chili powder. Maybe a little less - not rounded.

A tablespoon of chipotle chili powder OR a Better more expensive alternative is to dice up a can of chipotle peppers in adobo sauce. Don’t do both. If I do this I use half the ancho powder too.

A can of black beans

A can of rotel or generic equivalent. You can use the hot rotes if you like it spicy.

A can of hominy - can sub corn. If you sub corn - put it in after you open the pot to eat. It’s better a little crispier.

I drain the cans of beans and hominy before tossing in.

If New Mexico hatch peppers are in season - I would sear one and roast it in oven with a little oil to darken it up - dice and toss in. If they are not in season or I’m lazy - toss in a can of diced hatch chili peppers - (the little hockey puck shaped cans ).

Give it all a stir to wet all the spices.

Bring pot to pressure for 25 minutes. That maybe a little long even but I like my chicken falling apart. You do you.

I don’t worry about release. I just go back when I’m ready and it’s usually naturally released. If you like corn put it in now - drained.

I love the fixins - as we called them growing up. Have an avocado sliced up. I squeeze a half fresh lime in my bowl. Toss in avocado. Some cilantro if you are inclined. I’ll squeeze a little sour cream in mine. I like having a small chunk of cheddar to nibble on while eating it. Also, a few tortilla chips crumbled in the bowl is divine.

Variations. I have diced a russet peeled and put it in to make it a little heartier. You can really change this. Have less chicken? Use another can of beans. Don’t be afraid to play. Don’t like it as hot omit some hot things. Get mild hatch peppers.

I don’t know how to make this as tasty and vegetarian- sorry for those with other dietary preferences.
