I low-balled my "desired salary" for a position I'm applying to, not realizing that the norm was a fair bit higher. They've requested an interview. Would it be okay to raise my desired salary if it comes up?

Why does it bother you that someone would want to maximize their salary? It sounds like you are kind of taking it personally.

Not OP, but as someone also doing hiring - If I've invested a couple interviews in you, made the case to my manager on why I should offer you what I'm offering, etc, etc. An you come back with unrealistic revisions it leaves a bad taste in my mouth. Nothing wrong with maximizing your salary but the initial callback or the interview really is the time to set your expectations and be frank about your range. Not at the 11th hour. It shows me that either you couldn't be upfront and honest, are juggling multiple offers and making me bid against an unknown third party, or are disorganized. All of that looks bad.
