It's hard to figure out from here since no one here got the full context, body language, etc. But is it possible that maybe she does like you and the whole situation where you denied being together came off to her as you aren't interested, so now she's afraid to get closer? Honestly if I were you, I would ask her if you did anything wrong. If she says no, shoot your shot. Tell her you like her. At worst, she says no and you're in the same place you are now. But she could say yes. There's nothing worse than regretting it months or years from now, when she's happy with someone else and tells you "Oh, I really liked you back then but we missed our chance."
