Microgreens + artichoke question

Hey! New to gardening a few things to share and a couple questions to hopefully be answered.

I just got my first harvest of microgreens that didn't go bad do to planting density or white mold, so I wanted to share my small success.

To kill 2 birds with 1 stone I also had a question about growing asparagus. I'm in zone 7 and I built a raised garden with hoop house for the winter. I had started a flat of 50 seedlings in September, cucumbers, strawberry, artichoke, and asparagus... Anyway the soil I used had dormant seeds from when I was trying to start lettuce in the same flat a few months ago. Well I started watering the tray again and the cucumbers started sprouting first, then the artichokes, and nothing with the asparagus and strawberries so I kinda gave up on them. The lettuce started sprouting in where I was hoping was asparagus so I continued to water them anyway.

Fast forward a month and I built a raised bed, and begin transplanting all the seedlings into my new garden... So I planted the lettuce/asparagus never expecting asparagus to come up. Few weeks later I have at least 100 mini shoots coming up with all the lettuce sprouts not to mention even more asparagus seeds I'd planted directly into the garden.

I took this subs advice and thinned my artichokes and they are doing great.. but now I'm wondering about the asparagus as it's like 6-7 shoots or asparagus in a bunch and they seem super delicate. Do I want to trim it back to 1 or 2 or just let them go wild? I head the first year you don't really get an edible crop and I was just hoping to get root systems set for next year.
