What is a foolproof way to dial in a coffee?

I'm asking because I find the "if it's sour go finer, and if it's bitter go coarser" instructions many give to be too simplistic, and often just leads to confusion.

Like, I'm never hitting sour OR bitter across any number of grind settings, wether it be too fine, or too coarse. This obviously makes dialing in a coffee a nightmare, and too often I finish a bag without ever feeling like I'm actually tasting the coffee.

I've been brewing for several years, have great equipment, but just can't seem to figure it out. I truly just want to get to the point where I can discuss a coffee I really like, and not just "did I finally do this correctly"? I'm very tired of the inconsistency. I'll let you know that I'm very jealous of all of you, that get to nerd out about specific beans in the "What are you drinking" threads. I'd love to be able to do that. So I'm wondering: what is your foolproof way to dial in a bag?

I'm sure I'm not alone in feeling a love/ hate relationship with this hobby. Sometimes I feel like giving up completely, and selling my stuff, but I'm already too addicted to chasing that great cup I guess.

Sorry for the rant... I'm just on bad cup number three, and at my wits end lol.
