[MOD] The Daily Question Thread

Can someone help me understand why I'm incapable of getting Cupping right?

I jump between Global Custom Water, and Third Wave Water. I've tried coarse/ medium/ medium fine grinds. I've tried 203F and 210F. I've tried Cupping maybe 5 or 6 bags over the course of a few years (so I've sporadically tried to get it right), and each time it just comes out super watery and bitter. No notes at all.

I tried again today, across 2 bags of coffee, and the results were exactly the same: bitter, watery, and just gross.

What I've been doing is: 11 grams of coffee, 200 grams of water. Pour water over grounds and let sit for about 8-10 minutes, break crust (I rarely see a crust), and let sit for another 5. Try said coffee, make a grimace, and pour down drain.
