My American friends would give almost anything to be oppressed by Europe like this

Am i missing something?

I'm guessing either compassion or knowledge of how the majority of workers in the US fare. Let's look at those points:

1 Protection at work.

I'll give you that one, due to OSHA. I don't know much about US worker safety standards.

2 Holidays

There's no legal mandate in the US for paid time off. Up to a quarter of US workers have no paid time off.

3 Time off work

This actually refers to the hours worked per week and again, Americans work more hours per week than most of their EU counterparts

4 Fairness

At will employment in many US states effectively renders any "fairness" moot.

5 Sickness rights

Not even close. No point in citing anything when the US doesn't even mandate vacation time.

6 Equal pay

That's the law in the US. Like the EU, compliance is spotty, so I can't say there's a win for the EU here.

7 Maternity rights

The US is the only developed country in the world which doesn't guarantee paid maternity leave

8 Parental leave

I understand that the US now offers 12 weeks of unpaid maternal and paternal leave, and that's a step in the right direction. I do not know how widely this is enforced. In terms of paid parental leave, the US still looks abominable compared to most developed nations

9 Discrimination

Very hit or miss. Mostly the US has similar laws to the EU here, but again, at will employment can render much of this moot. And as news around the Idaho Religious Freedom Restoration Act has informed the world, Idaho, like many US states, offers no protection for discrimination against sexual orientation.

10 Healthcare on Holiday

There's nothing comparable in the US, but this is a unique situation because this can largely apply to EU citizens visiting other EU countries.
