My family is killing my love of cooking

I (dad) do the majority of the cooking. Here’s how it goes down in my house ever since they could start eating (kids are currently 8 and 5):

I make whatever the fuck I want. I’ll gladly take requests (healthy), but it’s typically up to me. That’s what is for dinner. Children are required to eat all the meat and vegetables. The carbs (rice, noodles, potatoes) are not required to be finished. If they finish, they get a small treat and get to choose their bedtime snack (typically yogurt). If they don’t finish their requirements, then it goes in the fridge and comes out for bed time snack where they can try again. Otherwise to bed hungry they go. This rarely happens anymore.

This has been very effective. The vast majority of foods are an acquired taste. They just need to plow through and eventually they’ll like it. The thought of making a secondary meal like chicken fingers or whatever utterly repulses me. Yeah, I’ll stop making certain things if they really really hate it (right now it’s just avocados), but I try not to bend too much. I want to raise adventurous adults.

Your husband needs to be supportive here or he can start cooking and deal with the rejection. Honestly, adults with toddler palettes need to grow the fuck up and be good examples.
