If you don't like hollow knight then you don't like metroidvanias. It is hands down THE best metroidvanias of all time, made even better on the switch because it's portable. Id like to know where you stopped, I highly suggest finishing it as the endgame content will truly give you many many more hours to play. So far I've but in over 100. The game isn't that difficult as long as you steer away from some of the harder challenges, which can imo make it harder then dark souls. If hollow knight is too hard for you to the point where you can't even finish the game then you will have a lot of trouble with games like dead cells which general gameplay is harder.

Anyway after that rant, it seems the best game for you would be Moonlighter. It has randomly generated dungeons like any good ol roguelike, but with a good sense of progression as you have to take the loot from the dungeons and get stronger. Would highly recommend checking it out. (Still tho go finish hollow knight!)
