Well, I would say you are doing good to understand kitty needs time to realize this is her home now, and that you will be her new servant.

At the same time, that bedroom is yours and kitty will have to get a new safe space, or learn to share yours. Is there a large box you could set up as a makeshift temporary safe place for her. A cut out door in front and back so she doesn't feel trapped, and set in a corner in living room, or even if you have a larger kennel - anything that would create a den link place it can retreat to?

You can be considerate of kitty, but certainly kitty needs to know where it's lunch comes from and we don't bite the and that feeds us. More time, some gentle reassurance is probably all kitty needs. It can take months for some cats to adjust.
