Aside from that, I disagree with your premise entirely. I think that not only is a menu that offers the number of classic cocktails impressive in itself, but it's also good for the industry and the spread of the cocktail culture. It takes balls to put a menu that large in front of the average person and it takes skill to be able to pull it off without batting an eye behind a bar three deep. To some cocktail geeks, it might seem like a cop out to use classics, but John Q. Public wouldn't recognize more than a handful of those drinks, guaranteed.

And that's why classics are so great. u/hebug made a counterpoint to you saying that "anyone can make a cocktail menu filled with a bunch of shitty original drinks", and I agree with him. Most people who walk into a cocktail bar these days haven't necessarily been to one before. And they should be introduced to the classics first. That's why they're classics. These are the cocktails that bartenders love to make for themselves. They're appreciated for their simplicity and approachability. They bring out the best qualities of the spirit and supporting ingredients in the most straightforward ways. It's cool to show somebody a really interesting drink with amari or vermouth or several other eccentric ingredients, but it's another experience entirely to give somebody their first old-fashioned, sazerac, ramos gin fizz, singapore sling, or last word.

So a list like this not only celebrates what everyone should love about cocktails, it says that these cocktails should be available anywhere, and that anyone who calls themselves a bartender should be able to pull them off. By doing that, these guys are setting the bar in a way that other places aren't. Most of the guests elsewhere don't even know these cocktails exist and most bartenders don't go out of the way to offer off-menu items.
