We picked up some bone broth from the store, I’d love to make ramen with it but TOTAL newbie here. Does the broth have enough flavor that I don’t need to add anything to it? Anyone have a recipe using store bought broth?

Ramen broth can be made from bones, yes but I think they’re typically boiled down much further than storebought western bone broth and its not really supposed to be where the flavor is.

When I make it, I boil bones down for a day with charred aromatics typically used in Asian cooking like ginger, green onion, garlic, and shallot, then everything gets strained and emulsified. Granted, this is what I’m used to, but I don’t think I’ve ever seen that in western cooking. In addition to broth, there’s a little seasoning oil/mixture that typically yields where the saltiness and flavor comes from. That’s usually oil with drippings (chicken fat/sesame oil), salt/soy sauce/miso/etc.

In tradition, the broth provides the body and base of the soup but the seasonings are usually added in assembly to the bowl before serving. What you can do is try to boil your store broth with the charred aromatic flavors and see what you can do with seasoning. Chili oil, grated garlic and miso might be nice. Or sesame oil, drained oil from frying chicken skin, and salt. These are supposed to be really concentrated and strong, then diluted into the broth.
