Playing Zelda: BotW for the first time and I hate it...

I think of it like a darker skyrim + super Mario bros with purposefully vague storytelling. It's a fantasy rpg (hence, skyrim), but the difficulty is mostly due to timing, which is where mario comes in. Some of the initial difficulty will come from learning the systems and what the game expects from you (usually patience). I don't recommend trying to hack-n-slash your way through. Fights are about learning the boss movesets by dying repeatedly.

You can alter the difficulty curve with the right builds and by grinding (its an rpg afterall) but it isn't absolutely necessary. You can technically beat the game at lvl 1. I mean, I couldn't, but it's possible.

Also, figure out how coop works early. I recommend just looking up a guide if you haven't played any other From Software games. Coop makes the game much easier and, IMO even with strangers, more enjoyable.
