It's pretty clear that the EU wants to hold the UK accountable for any liabilities the UK has agreed to cover up until 2025, which would amount to probably something like 100 billion, payable in smaller regular payments.

Don't act like these are debts. We're obligated to make payments for as long the treaties are in force. Once we withdraw from the treaties (Our legal right under Article 50), those legal obligations cease

This is not a "blank cheque", this is switching your phone provider or moving to a different flat when your contract states that you will be a customer/renter for the next 11 months anyway.

My phone provider or landlord would present an immediate figure on the amount that I owe. We wouldn't see the absurd situation where they refuse to tell me how much I owe until I enter into some sort of negotiation and present my own figure. My legal obligations would be entirely clear and they would easily be able to sue me if I defaulted. It's an entirely different situation.

Of course. Nobody wants to do business with somebody who is unable to fulfil a contract they signed.

Again, what contract? This isn't a government bond. These are political commitments for as long as a particular treaty is in force. Don't try and conflate it with debt.
