I have/had (three have now passed away, two from dementia, 1 from unrelated illness) 5 members of my family with dementia, including my own father so I know it well outside of my work too. The fact he switches back would show it is not dementia to me. It takes time to calm someone with dementia. They lack some mental capacity which is why they exhibit frustration in a physical way, such as screaming, shouting etc, so they would not realise what they have done and switch back so quickly. As I've said though violence to others is not generally the first expression of frustration. None of my family members have attacked out of frustration, other than my grandmother who held a nurses arms back and batted her away when they were trying to change her catheter.

I dislike the assumption if an old person is violent it means dementia. Some people are just ass holes and old. Also France hasnt banned smacking children so probably a little more accepted there, particularly by the older generation who grew up with the mind set that you hit a child if they are misbehaving.

I'm speaking of my experience with hundreds of people and only one has smacked a child. I respect you clearly have a different experience but I imagine the people you know did become violent they were not early stages.
