Me too. Which is I mentioned the Asari, they guided their evolutionary path. Only difference from OP's question, they likely do not need to entirely engineer a species when there are thousands of pre-sapient bipedal species in the galaxy. They clearly picked the most naturally-evolved of their cycle and engineered at least once to be on the apex of galactic civilisation (expecting them to decode the beacons and rule everyone in the fight against the Reapers), uplifted the Hanar for some reason, and merely studied the other ones worthy of receiving a technological singularity through their archives.

The Protheans did plan to control evolution on a small scale, this is confirmed, but they did not entirely engineer bipedal sentient species because there is absolutely no need for them to attempt that, and they would know that the Reapers would wipe out anyone directly involved with the Protheans (why the Asari were left pre-flight and oblivious of the nature of their "Goddesses").
