Quadro RTX 3000 Mobile VS GeForce RTX 2080Max-Q

115w TDP

The Quadro RTX 3000's TGP is 60-80w (Source). Performance level is somewhat below that of a 2070 Max-Q. The MSI WS75 is 0.7" thin and is unlikely to accommodate a 115w TDP GPU.

Gaming performance should similar in the end

The 2080 Max-Q will perform significantly better better in nearly all tasks. I also doubt whether the optimized drivers and ISV certification of the Quadro would make it a better performer in CAD or Adobe applications. The 2080 Max-Q would be a clear choice if VR is part of the workflow.
