Nope, you pretty much got it down.
The idea is to tame max level 150 (180 tek) dinos to get the highest possible stats.
At the start, when I have nothing, I will look for level 100-130 dinos and just meat or berry tame them, those become my utility dinos that I use for resource gathering.
Once I establish a dino pen with kibble production dinos and get some kibble cranking, then I start looking for 135-150 (140-180 tek) dinos to kibble tame.
Once I have at least 2-3 high level tames of a species, I will breed them to combine the best stats from the parents into the offspring. But just because I now have a base, doesn’t mean I stop looking for more high levels to tame.
For instance, I recently tamed 2 ankys, a 145 and a 140. One got higher health stat than what my current base has, the other got higher base weight than my current line (post tame stats). So I will be breeding these 2 new tames with my current base ankys to upgrade them.
My ankys currently have stats that are getting so high, that I don’t bother wasting kibble on taming anything lower level than a 140.
You can definitely breed your tek rexes, and this will be your starting base. Also the added benefit that you can hatch a extra one and imprint it for the stat boost, and now you have a decent starter utility rex for meat and hide runs.
