Questions about Taiwan (ARC, Setting Up, Taxes, Many!)

And I'm sorry if this post annoys you, but isn't this "doing (my) own research?" Asking questions from people who know this?
I've worked in Korea, Japan, and China. In Korea and Japan, my employer did the same as yours: housing, ARC, banking, phone plans, and all of that they set up for me or guided me.
I just haven't seen that with Taiwan. It seems radically different. Today I got back from a week vacation in Taipei, and when I spoke to teachers I met travelling there they all described how jobs are typically part-time and seemingly fluid, with them jumping between jobs regularly. This is totally foreign to me, as my 6 years teaching throughout East Asia I've only ever had one job at a time.

Seriously, I would like your answers. I'm asking for that.
