/r/anime, what do you like about Yukinoshita so much?

To be genuinely honest, I really enjoy the development that she goes through (not comparing it to Senjougahara or anything, this is going to avoid any of the Best Girl contest stuff for circlejerking reasons).

Yeah she's a kuudere and that brings some amusing and appealing qualities, but eventually as the seasons progress you see a lot of development going on with all three of the characters.

I honestly don't disagree with you on how she hasn't become anything, because both I and even the actual show realize this (last episode of second season has lots of examples of this). Personally, I think Yukino has great potential to become one of the best characters if they decide to release some OVAs or have a third season.

But in a lot of ways, "broken" characters are very familiar, no character is truly perfect and in Oregairu we see someone who looked like a veritable Ice Queen of perfection almost break down because she couldn't convey her emotions. Say what you will, but to many people, it's an emotionally powerful moment.

Overall I think there are two reasons why she's so popular,

1) You're typical end of the season impression/rush. Yeah, it's a thing unfortunately, it doesn't make me hate Best Girl in any way, but it does cause a lot of characters that I can acknowledge as powerful characters to lose (ESPECIALLY HITAGI).

2) She's at least moderately popular. I think we know that she's going down in a lot of salt in the finale. But it took a lot of votes to actually get her here and the salt really only took off at the quarterfinals I believe? Or at least the round where /u/fuzzyjustin rallied an army to our cause.

So that's that. Hopefully that was a good enough explanation because I don't have a TL;DR for this.
