Random fridge contents meal prep

This is the real-deal-poverty meal prep of repurposed fridge contents. We have chicken, pork, rice, reminants of what was broccoli, and homemade sauerkraut in a mason jar. Haven't died yet. I'm going to go through what each one was because its kinda amusing.

I bought the chicken whole when it was on sale and brined it for one day with some sliced oranges and kosher salt. I'm ghetto so I put it in a garbage bag and a gallon of water or so and stuffed that sucker in the fridge. Roommates were scared of it. Dead chickens can smell fear you know.

Rinsed that puppy off and then massaged it on top of the skin and under the skin with some Old Bay. I seared it in my cast iron and then grabbed a half cup water in the pressure cooker and popped it in on the chicken setting. (Brining keeps the chicken moist and awesome.)

Pork was another weeks meal that I also pressure cooked. All I had was some garlic and Cajun seasoning from my failed gumbo incident so I said fuck it. I stabbed that pork sirloin and shoved garlic into the wounds and smothered it in Cajun hot goodness. Seared it in cast iron and put it in the pressure cooker on the well-done chicken setting. I don't meat discriminate. (It was fall of the bone good. Damn.) Rice was made with the combined juices from both, the pork one I saved in the freezer so I just melted it. My mom pity bought me some broccoli so I put it on top of the rice in my rice cooker. That was a separate meal.

The sauerkraut was made in a mason jar no air tight fancy lids and shit. I just stuffed a smaller jar in there and poured some olive oil on top to keep the lettuce under.
