I think the best thing for you would be to to try, like you said, eating vegan a few days a week. While you're doing this really experiment and learn some good vegan recipes (if you don't know how to cook, this is also a good opportunity to learn, it's an extremely useful skill for anyone). I find the biggest barrier for a lot of people is not necessarily just removing animal products from their diet, but also that once they've done so they're completely unable to prepare food for themselves that isn't just a boring salad or like some asparagus (basically the sides portion of their former 'meat + sides' formula), and they come to believe it's impossible to cook decent meals without meat.

Once you feel comfortable with a good few vegan recipes (I would say at least five for breakfast, lunch and dinner each, and a few snacks) try eating only vegan for a month. Now that you have decent meals in your back pocket you might realize it's not as difficult as you think at this moment.
