Request - Does anyone have cold vegetarian lunch ideas?

ADULT LUNCHABLES bc I'm a lazy bitch and sometimes just wanna snack on a bunch of random stuff instead. Usually I'll have some combo of the following:

  • Carbs: crackers, pretzels, pita, tortilla chips, the list is endless

  • Protein: hard boiled eggs, faux meat (quorn 'turkey' slices have my heart), cheese (slices, string cheese, baby bel, laughing cow cream cheese wedges), roasted chickpeas, greek or regular yogurt, edamame

  • Whatever fruits and vegetables I have lying around- currently loving bell pepper strips and cucumber slices with a sprinkle of tajin. Dried fruit is a good option if you're looking for something energy dense to re-fuel after a workout.

  • Dips like hummus, salsa, guacamole, cream cheese, salad dressing

  • Little "extras" if I need to increase the calories in my meal, like olives, seeds, or a couple squares of dark chocolate. If you're looking to build muscle maybe a protein shake or bar?
