It’s not rude to decline food someone prepared for you

Not long ago I visited my friend I see once in a while. She knows I don't eat dairy. Probably forgot, but I swear, she insisted so intensly I couldn't get out of it so I ended up drinking a cup of milk (among other dairy and sugar filled dishes) after probably... 6 years? I felt horrible and I could feel my dermatitis flare up and acne popping up. I also had a stomach ache, because of course I did (it ruined the next day trip I went on). Fuck, I hate it when people force me to eat their food, especially after I tell you what I don't eat and you don't need to prepare anything. No it's not "just one day in a year", I like my consistency and discipline. I almost feel like people like to mess this up me?
