[SAD] Restaurant puts up signs alerting customers they don't pay staff enough to survive on

Waiters I’ve had in the US are very concerned with making sure I’m enjoying myself that they almost go to far and detract from the experience.

That's because that's how service is in the US. I'll get downvoted, I know...I don't care. Ask expats who move to Europe, hell you can find youtube videos on this subject, about things that annoy them about their new country. One is often that they have to wave down a server. Are they not there to serve? Want more napkin? Wave down a server. Ask for tap water? Get a dirty look. Want more BBQ sauce? Wave down the server again. Ready to pay? Wave down the server again. American as a whole don't like doing this.
